Ingredients

  • 500 g sauerkraut, drained
  • 250 g fresh cabbage, chopped
  • 300 g pork shoulder, cut into cubes
  • 200 g beef, cut into cubes
  • 150 g smoked sausage, sliced
  • 150 g bacon, diced
  • 2 medium onions, chopped
  • 3 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 tsp dried marjoram
  • 1 tsp black pepper
  • 2 bay leaves
  • 500 ml beef broth
  • to taste salt
  • to taste pepper

Steps

  1. In a large pot, brown the bacon over medium heat for about 5 minutes until crispy. This step adds depth and flavor to the stew.

  2. Add the onions and garlic, cooking for an additional 3-4 minutes until softened and fragrant.

  3. Stir in the pork and beef cubes, browning them for about 5-7 minutes. This initial searing locks in juices and enhances flavor.

  4. Combine the sauerkraut, fresh cabbage, sausage, tomato paste, marjoram, black pepper, bay leaves, and beef broth. Mix well.

  5. Bring the mixture to a simmer, cover, and reduce heat to low. Let it cook for at least 1 hour, stirring occasionally.

  6. Cool the stew and refrigerate overnight. Reheat over low heat the next day, allowing the flavors to meld further. Repeat this process for 2-3 days for best results.

Why this works

Bigos, or Polish Hunter's Stew, is beloved for its complex flavors that deepen over time. The initial slow-simmering process melds the distinct flavors of meats and sauerkraut while allowing the acidity of the sauerkraut to balance the richness of the meats. Cooling and reheating enables the stew to mature, as the ingredients interact, creating a harmonious dish. If it seems too acidic after a few days, adding a touch of sugar can help balance the flavors. This dish also benefits from a variety of meats, as each contributes unique notes, making Bigos a versatile and comforting meal.
