Ingredients

  • 1 kg chicken, cut into pieces
  • 250 ml red palm oil
  • 200 g okra, sliced
  • 4 cloves garlic, minced
  • 1 large onion, diced
  • 2 medium tomatoes, chopped
  • 2 jindungo chilies, chopped
  • Salt to taste
  • Black pepper to taste
  • Water as needed

Steps

  1. In a large pot, heat the red palm oil over medium heat until it shimmers, about 3-5 minutes. This helps to release the flavors of the oil.

  2. Add the diced onion and minced garlic, sautéing until the onion is translucent, around 5-7 minutes.

  3. Stir in the chopped tomatoes and jindungo chilies, cooking for another 5 minutes until the tomatoes soften.

  4. Add the chicken pieces to the pot, seasoning with salt and black pepper. Cook for about 10 minutes, turning occasionally, until the chicken is browned on all sides.

  5. Pour in enough water to cover the chicken, bring to a boil, then reduce the heat and simmer for 30 minutes. This allows the flavors to meld together.

  6. Add the sliced okra to the pot, stirring gently. Simmer for an additional 10-15 minutes, or until the okra is tender and the sauce thickens.
