Ingredients

- 30 g all-purpose flour

- 3 large eggs, separated
- 1/2 tsp salt

- 1/4 tsp cayenne pepper (optional)

Steps
Preheat the oven to 190°C (375°F). A hot oven is essential for the souffle to rise properly.
In a saucepan, melt the butter over medium heat. Stir in the flour to create a roux, cooking for about 2 minutes until lightly golden.
Gradually whisk in the milk, cooking until the mixture thickens, about 3-5 minutes. Remove from heat and stir in the cheese, salt, pepper, cayenne, and nutmeg.
In a clean bowl, whip the egg whites until stiff peaks form. This incorporates air, which is crucial for the souffle's rise.
