Ingredients
- 1 medium onion, chopped
- 2 medium carrots, grated
- 1 bell pepper, diced
- 2 medium tomatoes, chopped
- 1 can (400g) baked beans, drained
- 1 tbsp curry powder
- 1-2 fresh chili peppers, chopped (to taste)
- 2 tbsp vegetable oil
- Salt to taste
Steps
Heat the vegetable oil in a large skillet over medium heat for about 2 minutes.
Add the chopped onion and sauté for about 3-4 minutes until translucent, stirring frequently.
Stir in the grated carrots and diced bell pepper, cooking for another 3-4 minutes to soften.
Add the chopped tomatoes, baked beans, curry powder, and chili peppers, mixing well.
Simmer everything together for about 5-7 minutes, allowing the flavors to meld, and season with salt.
